INGREDIENTS REQUIRED FOR DOSA

2 cup = rice-preferably parboiled
1/2 cup = split
1/2 cup = husked black gram ( washed urad dal )
1/2 Tablespoon = fenugreek seeds
2 Tablespoon = salt
Oil in the pan for cooking

 

INGREDIENTS REQUIRED FOR MASALA DOSA FILLING

3 Cup = boiled potatoes
1 1/2 cup = onion sliced ( chopped )
2 green chillies it’s optional
2 Tablespoon = oil
1 Tablespoon = mustard seeds
6-7 curry leaves
2 Tablespoon = salt
1/4 Teaspoon turmeric powder
1/2 Cup = water

METHOD OF MASALA DOSA FILLING :-

1. Start heating oil in a pan, add all above filling ingredients and keep frying.

2. Now add a Salt and the turmeric mix well before adding potatoes.

3. Keep frying potatoes untill mix well with a little bit of water. And let it simmer for 2-3 minutes only.

METHOD OF MAKING MASALA STUFFED DOSA RECIPE

1. Wash and soak the rice, dal and fenugreek seeds in different bowl for 5-6 hours over night.

2. Used to grind dal, and rice smooth and take them in different bowls.

3. Add salt and enough water to make into dropping consistency. Leave to ferment overnight or more depending on the weather, till a little spongy.

4. Make sure check it out, if thickened too much, than add a little bit water to make it smoot.

5. Start heating tawa and spread oil over it, then splash a little bit water over it. Then immediately pour butter over it.

6. This will have to be very swift and will need a bit of practice.

7. After spreading the batter, lower the heat and dribble a little oil around the edges so that it seeps under the dosa.

8. When edges start browning a bit, pass a flat spoon under it to ease the Dosa off the pan.

9. Put desired filling in the center, and fold the two edges over.

10. Serve accompanied with Sambar and chutney.
